Ingredients

  • White fish fillets (e.g., tilapia or cod) - 300 grams
  • Cornstarch - 1/2 cup
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Vegetable oil - 1/4 cup (for frying)
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 1/2 cup (canned or fresh)
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Soy sauce (low sodium) - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Ketchup - 2 tablespoons
  • Water - 1/4 cup
  • Sesame oil - 1 teaspoon

Steps

  1. Pat the fish fillets dry with paper towels and cut them into bite-sized pieces.
  2. In a bowl, mix cornstarch, salt, and pepper. Dredge the fish pieces in the cornstarch mixture, ensuring they are well-coated.
  3. Heat vegetable oil in a skillet over medium heat. Once hot, add the coated fish pieces and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  4. In the same skillet, add the diced onion, garlic, and bell peppers. Sauté for about 3-4 minutes until they are slightly soft.
  5. Add the pineapple chunks to the skillet and cook for another 2 minutes.
  6. In a small bowl, combine soy sauce, rice vinegar, brown sugar, ketchup, and water. Stir well and pour the sauce over the vegetables in the skillet.
  7. Bring the mixture to a simmer and allow it to thicken slightly, about 2-3 minutes.
  8. Gently fold the crispy fish pieces into the sauce and vegetable mixture, ensuring they are well-coated.
  9. Drizzle with sesame oil before serving.
  10. Serve hot over steamed rice or noodles.
