- Rice vinegar - 2 tablespoons
- Brown sugar - 1 tablespoon
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped for garnish
Steps
- Wash and cut the eggplant into bite-sized cubes. Sprinkle with a little salt and let it sit for 10 minutes to draw out moisture.
- Rinse the eggplant under cold water to remove excess salt and pat dry with paper towels.
- In a bowl, mix soy sauce, rice vinegar, brown sugar, cornstarch, and water to create the sweet and sour sauce. Set aside.
- Heat vegetable oil in a large pan over medium heat. Add the eggplant and sauté for about 5-7 minutes until tender and slightly golden.
- Add minced garlic and ginger to the pan and stir-fry for 1 minute until fragrant.
- Add the chopped red and green bell peppers to the pan and stir-fry for another 3-4 minutes until they are tender-crisp.
- Pour the sweet and sour sauce over the vegetables, stirring well to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- Drizzle with sesame oil and stir to combine.
- Serve hot, garnished with chopped green onions.
