- Carrot - 1 medium, julienned
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, minced
- Soy sauce (kosher) - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Brown sugar - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 120 milliliters
- Salt - to taste
- Pepper - to taste
- Sesame seeds - 1 teaspoon (optional) for garnish
Steps
- In a bowl, combine the diced chicken, soy sauce, and cornstarch, mixing well to coat the chicken. Let it marinate for 10 minutes.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until browned and cooked through. Remove from the pan and set aside.
- In the same pan, add the remaining tablespoon of oil. Sauté the garlic and ginger for about 30 seconds until fragrant.
- Add the sliced onion, bell peppers, and carrot to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix the rice vinegar, brown sugar, and water. Pour this mixture over the cooked vegetables in the pan and stir well.
- Return the cooked chicken to the pan, stirring to combine everything. Cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.
- Season with salt and pepper to taste. Serve hot, garnished with sesame seeds if desired.
