Ingredients

  • Chicken breast - 300 grams, diced
  • Red bell pepper - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Water - 120 milliliters
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - 1 teaspoon (optional) for garnish

Steps

  1. In a bowl, combine the diced chicken, soy sauce, and cornstarch, mixing well to coat the chicken. Let it marinate for 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Sauté the garlic and ginger for about 30 seconds until fragrant.
  4. Add the sliced onion, bell peppers, and carrot to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix the rice vinegar, brown sugar, and water. Pour this mixture over the cooked vegetables in the pan and stir well.
  6. Return the cooked chicken to the pan, stirring to combine everything. Cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.
  7. Season with salt and pepper to taste. Serve hot, garnished with sesame seeds if desired.
