- Chicken breast - 300 grams, cubed
- Red bell pepper - 1 medium, cut into chunks
- Green bell pepper - 1 medium, cut into chunks
- Pineapple chunks - 100 grams, fresh or canned
- Gluten-free soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Ketchup - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cornstarch - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Skewers - 4 (soaked in water if wooden)
Steps
- In a bowl, combine gluten-free soy sauce, rice vinegar, honey, ketchup, garlic, ginger, and sesame oil to create the marinade.
- Add the cubed chicken to the marinade, cover, and let it marinate in the refrigerator for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables and pineapple.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken, red bell pepper, green bell pepper, and pineapple onto the skewers alternately.
- In a small bowl, mix cornstarch with a little water to create a slurry.
- Brush the skewers with the cornstarch slurry to help thicken the sauce while cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Season with salt and black pepper to taste before serving.
