- Bell pepper (red) - 1 medium, chopped
- Cucumber - 1 medium, diced
- Carrot - 1 small, julienned
- Red onion - 1 small, thinly sliced
- Lettuce (mixed greens) - 100 grams
- Pineapple chunks - 100 grams
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Ketchup - 2 tablespoons
- Brown sugar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Cut the chicken breast into bite-sized pieces and season with salt and pepper.
- Coat the chicken pieces in cornstarch until evenly covered.
- Heat vegetable oil in a pan over medium-high heat. Add the chicken and fry until golden brown and cooked through, about 6-8 minutes. Remove and set aside.
- In the same pan, add bell pepper, cucumber, carrot, and red onion. Stir-fry for about 3-4 minutes until slightly tender.
