  • Cooked chicken breast, shredded - 150 grams
  • Bell pepper, sliced - 1 medium (about 120 grams)
  • Pineapple chunks, fresh - 100 grams
  • Red onion, thinly sliced - 50 grams
  • Low-sugar ketchup - 3 tablespoons
  • Rice vinegar - 2 tablespoons
  • Honey - 1 tablespoon
  • Soy sauce (low sodium) - 1 tablespoon
  • Garlic, minced - 1 clove
  • Ginger, grated - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Mozzarella cheese, shredded - 100 grams
  • Green onions, chopped - 2 tablespoons
  • Sesame seeds - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a small bowl, combine ketchup, rice vinegar, honey, soy sauce, garlic, and ginger to create the sweet and sour sauce.
  3. In a skillet, heat olive oil over medium heat and add the shredded chicken, bell pepper, and red onion. Sauté for 5-7 minutes until vegetables are tender.
  4. Add the pineapple chunks and sweet and sour sauce to the skillet. Stir well and cook for an additional 2-3 minutes until heated through.
  5. Spread the chicken and vegetable mixture evenly over the whole wheat pizza crust.
  6. Sprinkle shredded mozzarella cheese on top of the chicken and vegetable mixture.
  7. Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly.
