- Pineapple chunks, fresh - 100 grams
- Red onion, thinly sliced - 50 grams
- Low-sugar ketchup - 3 tablespoons
- Rice vinegar - 2 tablespoons
- Honey - 1 tablespoon
- Soy sauce (low sodium) - 1 tablespoon
- Garlic, minced - 1 clove
- Ginger, grated - 1 teaspoon
- Olive oil - 1 tablespoon
- Mozzarella cheese, shredded - 100 grams
- Green onions, chopped - 2 tablespoons
- Sesame seeds - 1 tablespoon
Steps
- Preheat the oven to 220°C (425°F).
- In a small bowl, combine ketchup, rice vinegar, honey, soy sauce, garlic, and ginger to create the sweet and sour sauce.
- In a skillet, heat olive oil over medium heat and add the shredded chicken, bell pepper, and red onion. Sauté for 5-7 minutes until vegetables are tender.
- Add the pineapple chunks and sweet and sour sauce to the skillet. Stir well and cook for an additional 2-3 minutes until heated through.
- Spread the chicken and vegetable mixture evenly over the whole wheat pizza crust.
- Sprinkle shredded mozzarella cheese on top of the chicken and vegetable mixture.
- Bake in the preheated oven for 12-15 minutes or until the cheese is melted and bubbly.
- Remove from the oven, sprinkle chopped green onions and sesame seeds on top, and let cool for a few minutes before slicing.
