Steps
- Rinse the rice under cold water until the water runs clear, then cook it according to package instructions, typically boiling in 300ml of water for about 15-20 minutes.
- While the rice is cooking, prepare the chicken. In a bowl, coat the diced chicken pieces with cornstarch, then dip them in the beaten egg to coat evenly.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the coated chicken bites and cook for about 5-7 minutes, turning occasionally until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil, then add the minced garlic, grated ginger, diced red bell pepper, and pineapple chunks. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
