  • White rice - 150 grams, uncooked

Steps

  1. Rinse the rice under cold water until the water runs clear, then cook it according to package instructions, typically boiling in 300ml of water for about 15-20 minutes.
  2. While the rice is cooking, prepare the chicken. In a bowl, coat the diced chicken pieces with cornstarch, then dip them in the beaten egg to coat evenly.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the coated chicken bites and cook for about 5-7 minutes, turning occasionally until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil, then add the minced garlic, grated ginger, diced red bell pepper, and pineapple chunks. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
