Ingredients

  • Chicken breast - 300 grams, diced
  • Gluten-free cornstarch - 1/2 cup
  • Egg - 1 large, beaten
  • Vegetable oil - 1/4 cup (for frying)
  • Bell pepper (red or yellow) - 1 medium, diced
  • Pineapple chunks - 1/2 cup (fresh or canned, drained)
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Apple cider vinegar - 2 tablespoons
  • Honey - 2 tablespoons
  • Gluten-free soy sauce - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a medium bowl, combine the diced chicken with the beaten egg, ensuring all pieces are coated.
  2. Dredge the chicken pieces in cornstarch until fully coated, shaking off any excess.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken in batches, frying until golden brown and cooked through, about 5-7 minutes. Remove and set aside on a paper towel-lined plate.
  4. In the same skillet, add the minced garlic, grated ginger, and diced bell pepper. Sauté for about 2-3 minutes until the peppers are slightly tender.
  5. In a small bowl, whisk together the apple cider vinegar, honey, gluten-free soy sauce, and ketchup to create the sweet and sour sauce.
  6. Add the pineapple chunks to the skillet with the peppers, then pour in the sauce. Stir to combine and let it simmer for 2-3 minutes.
  7. Return the fried chicken bites to the skillet, tossing to coat them well with the sauce. Cook for an additional 2 minutes until heated through.
  8. Garnish with chopped green onions and sesame seeds before serving.
