Ingredients

  • Boneless, skinless chicken breast - 300 grams, cut into bite-sized pieces
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Onion - 1 small, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Brown sugar - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Water - 1/2 cup
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish (optional)

Steps

  1. In a bowl, combine soy sauce, rice vinegar, brown sugar, and water to make the sweet and sour sauce. Set aside.
  2. In a separate bowl, toss the chicken pieces with cornstarch until evenly coated.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and sauté until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  4. In the same skillet, add the remaining tablespoon of oil. Add the garlic, onion, bell pepper, carrot, and broccoli. Stir-fry the vegetables for about 4-5 minutes until they are tender but still crisp.
  5. Return the cooked chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the mixture and stir well to combine.
  6. Cook for an additional 3-4 minutes, allowing the sauce to thicken slightly and coat the chicken and vegetables evenly.
  7. Season with salt and black pepper to taste. Serve hot, garnished with sesame seeds if desired.
