Ingredients
- Boneless, skinless chicken breast - 300 grams, cut into bite-sized pieces
- Bell pepper (red or yellow) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli florets - 100 grams
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Soy sauce (kosher) - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Brown sugar - 2 tablespoons
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 1/2 cup
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish (optional)
Steps
- In a bowl, combine soy sauce, rice vinegar, brown sugar, and water to make the sweet and sour sauce. Set aside.
- In a separate bowl, toss the chicken pieces with cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and sauté until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the remaining tablespoon of oil. Add the garlic, onion, bell pepper, carrot, and broccoli. Stir-fry the vegetables for about 4-5 minutes until they are tender but still crisp.
- Return the cooked chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the mixture and stir well to combine.
- Cook for an additional 3-4 minutes, allowing the sauce to thicken slightly and coat the chicken and vegetables evenly.
- Season with salt and black pepper to taste. Serve hot, garnished with sesame seeds if desired.
