- Soy sauce - 2 tablespoons (ensure it's kosher)
- Rice vinegar - 1 tablespoon
- Brown sugar - 1 tablespoon
- Ketchup - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Sesame oil - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cooked rice - for serving
Steps
- In a bowl, combine soy sauce, rice vinegar, brown sugar, ketchup, and cornstarch. Mix well and set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and black pepper. Cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic, ginger, broccoli, red bell pepper, and carrot. Stir-fry for about 4-5 minutes until the vegetables are crisp-tender.
- Add the cooked chicken back into the skillet with the vegetables. Pour the sauce mixture over the chicken and vegetables, stirring well to combine.
- Add 100 ml of water to the skillet, bring to a gentle simmer, and cook for an additional 5 minutes until the sauce thickens slightly.
- Drizzle sesame oil over the dish before serving, and serve hot over cooked rice.
