  • Garlic - 2 cloves, minced

  • Soy sauce - 2 tablespoons (ensure it's kosher)
  • Rice vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Ketchup - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cooked rice - for serving

Steps

  1. In a bowl, combine soy sauce, rice vinegar, brown sugar, ketchup, and cornstarch. Mix well and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and black pepper. Cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic, ginger, broccoli, red bell pepper, and carrot. Stir-fry for about 4-5 minutes until the vegetables are crisp-tender.
  4. Add the cooked chicken back into the skillet with the vegetables. Pour the sauce mixture over the chicken and vegetables, stirring well to combine.
  5. Add 100 ml of water to the skillet, bring to a gentle simmer, and cook for an additional 5 minutes until the sauce thickens slightly.
  6. Drizzle sesame oil over the dish before serving, and serve hot over cooked rice.
