  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons, low sodium
  • Rice vinegar - 1 tablespoon
  • Honey - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Cooked brown rice - 150 grams, for serving

Steps

  1. In a bowl, combine the diced chicken with soy sauce, cornstarch, salt, and pepper. Let it marinate for 10 minutes.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. In the same skillet, add garlic, ginger, onion, bell pepper, and carrot. Sauté for 5-6 minutes until vegetables are tender.
  4. Add the pineapple chunks, honey, and rice vinegar to the skillet. Stir and cook for another 2-3 minutes until heated through.
  5. Return the cooked chicken to the skillet, mixing everything well. Cook for an additional 2 minutes to combine the flavors.
