- Onion - 1 small, chopped

- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons, low sodium
- Rice vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Cornstarch - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Cooked brown rice - 150 grams, for serving
Steps
- In a bowl, combine the diced chicken with soy sauce, cornstarch, salt, and pepper. Let it marinate for 10 minutes.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, add garlic, ginger, onion, bell pepper, and carrot. Sauté for 5-6 minutes until vegetables are tender.
- Add the pineapple chunks, honey, and rice vinegar to the skillet. Stir and cook for another 2-3 minutes until heated through.
- Return the cooked chicken to the skillet, mixing everything well. Cook for an additional 2 minutes to combine the flavors.
- Serve the sweet and sour chicken over cooked brown rice.
