Ingredients

  • Cauliflower - 300 grams
  • Egg - 1 large
  • Shredded cheese (mozzarella or cheddar) - 100 grams
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Bell pepper (diced) - 50 grams
  • Green onion (sliced) - 30 grams
  • Sweet and sour sauce - 100 grams
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Wash and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
  3. Once cooked, let the cauliflower cool slightly, then drain any excess moisture and pulse in a food processor until it resembles rice.
  4. In a mixing bowl, combine the cauliflower rice, egg, shredded cheese, almond flour, salt, and black pepper. Mix well to form a dough.
  5. On a baking sheet lined with parchment paper, spread the cauliflower dough into a round pizza shape, about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  7. While the crust is baking, in a small saucepan, mix the sweet and sour sauce, cornstarch, and water. Heat over medium heat until thickened, stirring constantly, about 3-5 minutes.
  8. Remove the crust from the oven and spread the sweet and sour sauce evenly over the top.
