- Egg - 1 large

- Almond flour - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Bell pepper (diced) - 50 grams
- Green onion (sliced) - 30 grams
- Sweet and sour sauce - 100 grams
- Cornstarch - 1 teaspoon
- Water - 2 tablespoons
Steps
- Preheat the oven to 220°C (428°F).
- Wash and chop the cauliflower into florets, then steam or microwave until tender, about 5-7 minutes.
- Once cooked, let the cauliflower cool slightly, then drain any excess moisture and pulse in a food processor until it resembles rice.
- In a mixing bowl, combine the cauliflower rice, egg, shredded cheese, almond flour, salt, and black pepper. Mix well to form a dough.
- On a baking sheet lined with parchment paper, spread the cauliflower dough into a round pizza shape, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
- While the crust is baking, in a small saucepan, mix the sweet and sour sauce, cornstarch, and water. Heat over medium heat until thickened, stirring constantly, about 3-5 minutes.
- Remove the crust from the oven and spread the sweet and sour sauce evenly over the top.
- Sprinkle the diced bell pepper and sliced green onion over the sauce.
- Return the pizza to the oven and bake for an additional 5-10 minutes until the vegetables are slightly cooked.
