Ingredients
- Cauliflower florets - 300 grams
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Erythritol or low-carb sweetener - 1 tablespoon
- Cornstarch - 1 tablespoon
- Water - 100 ml
- Olive oil - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- Rinse and cut the cauliflower into small florets. Bring a pot of water to a boil and blanch the cauliflower for about 3 minutes, then drain and set aside.
- In a large pan or wok, heat the olive oil over medium heat. Add the diced onion, garlic, and ginger, and sauté until the onion is translucent, about 3-4 minutes.
- Add the blanched cauliflower, diced red and green bell peppers to the pan, and stir-fry for another 5-7 minutes until the vegetables are tender-crisp.
- In a small bowl, mix the soy sauce, rice vinegar, erythritol, cornstarch, and water to create the sweet and sour sauce.
- Pour the sauce over the vegetables in the pan, stirring continuously until the sauce thickens, about 2-3 minutes. Season with salt and black pepper to taste.
- Drizzle with sesame oil before serving and garnish with sesame seeds.
