Ingredients

  • Cauliflower florets - 300 grams
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Erythritol or low-carb sweetener - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Water - 100 ml
  • Olive oil - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Rinse and cut the cauliflower into small florets. Bring a pot of water to a boil and blanch the cauliflower for about 3 minutes, then drain and set aside.
  2. In a large pan or wok, heat the olive oil over medium heat. Add the diced onion, garlic, and ginger, and sauté until the onion is translucent, about 3-4 minutes.
  3. Add the blanched cauliflower, diced red and green bell peppers to the pan, and stir-fry for another 5-7 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix the soy sauce, rice vinegar, erythritol, cornstarch, and water to create the sweet and sour sauce.
  5. Pour the sauce over the vegetables in the pan, stirring continuously until the sauce thickens, about 2-3 minutes. Season with salt and black pepper to taste.
  6. Drizzle with sesame oil before serving and garnish with sesame seeds.
