- Pork belly - 200 grams

- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cucumber - 1 small, thinly sliced
- Carrot - 1 small, julienned
- Sugar - 1 teaspoon
- Water - 100 ml
- Fresh coriander - a handful, for garnish
Steps
- In a bowl, combine minced garlic, rice vinegar, soy sauce, sesame oil, salt, and black pepper to create the marinade.
- Slice the pork belly into thin pieces and add to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes.
- While the pork is marinating, prepare the pickled vegetables. In another bowl, combine sliced cucumber, julienned carrot, sugar, and water. Mix well and let sit for 10 minutes.
- Heat a frying pan over medium heat and add the marinated pork belly slices, cooking for about 3-4 minutes on each side until golden brown and cooked through.
- Once cooked, remove the pork belly from the pan and let it rest for a couple of minutes before slicing into bite-sized pieces.
- Serve the pork belly warm, garnished with fresh coriander, alongside the pickled vegetables.
