Ingredients

  • Pork belly - 200 grams

  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 small, julienned
  • Sugar - 1 teaspoon
  • Water - 100 ml
  • Fresh coriander - a handful, for garnish

Steps

  1. In a bowl, combine minced garlic, rice vinegar, soy sauce, sesame oil, salt, and black pepper to create the marinade.
  2. Slice the pork belly into thin pieces and add to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes.
  3. While the pork is marinating, prepare the pickled vegetables. In another bowl, combine sliced cucumber, julienned carrot, sugar, and water. Mix well and let sit for 10 minutes.
  4. Heat a frying pan over medium heat and add the marinated pork belly slices, cooking for about 3-4 minutes on each side until golden brown and cooked through.
  5. Once cooked, remove the pork belly from the pan and let it rest for a couple of minutes before slicing into bite-sized pieces.
  6. Serve the pork belly warm, garnished with fresh coriander, alongside the pickled vegetables.
