- Sweet potato vermicelli - 100 grams
- Vegetable broth - 500 ml
- Tofu (firm) - 100 grams, cubed
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Scallions - 2, chopped
- Coriander leaves - a handful, chopped
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the sweet potato vermicelli in warm water for 10 minutes, then drain and set aside.
- In a pot, heat the vegetable broth over medium heat and add the minced garlic and grated ginger. Sauté for 2-3 minutes until fragrant.
- Add the cubed tofu to the pot and simmer for 5 minutes, allowing the tofu to absorb the flavors.
- Stir in the soy sauce, chili oil, and rice vinegar, mixing well to combine.
- Add the soaked vermicelli to the pot and cook for an additional 5-7 minutes, stirring occasionally until the noodles are soft.
- Season with salt and black pepper to taste, then remove from heat.
- Serve hot, garnished with chopped scallions and coriander leaves, and drizzle with sesame oil.
