  • Sweet potato vermicelli - 100 grams
  • Vegetable broth - 500 ml
  • Tofu (firm) - 100 grams, cubed
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Scallions - 2, chopped
  • Coriander leaves - a handful, chopped
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the sweet potato vermicelli in warm water for 10 minutes, then drain and set aside.
  2. In a pot, heat the vegetable broth over medium heat and add the minced garlic and grated ginger. Sauté for 2-3 minutes until fragrant.
  3. Add the cubed tofu to the pot and simmer for 5 minutes, allowing the tofu to absorb the flavors.
  4. Stir in the soy sauce, chili oil, and rice vinegar, mixing well to combine.
  5. Add the soaked vermicelli to the pot and cook for an additional 5-7 minutes, stirring occasionally until the noodles are soft.
  6. Season with salt and black pepper to taste, then remove from heat.
  7. Serve hot, garnished with chopped scallions and coriander leaves, and drizzle with sesame oil.
