Ingredients

  • Firm tofu - 200 grams
  • Tofu skin (yuba) - 100 grams
  • Carrot - 50 grams, finely diced
  • Shiitake mushrooms - 50 grams, finely chopped
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. Drain the firm tofu and press it between paper towels to remove excess moisture for about 10 minutes.
  2. In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add diced carrots and chopped shiitake mushrooms to the pan, cooking for 3-4 minutes until softened.
  4. Stir in the green onion, soy sauce, sesame oil, salt, and black pepper. Cook for another 2 minutes, then remove from heat and let the filling cool.
  5. Once the tofu is pressed and dried, crumble it into a bowl. Add the cooled vegetable mixture and cornstarch to the bowl, mixing until well combined.
  6. Cut the tofu skin into squares (about 10 cm x 10 cm). Place a tablespoon of the filling in the center of each square.
  7. Fold the corners of the tofu skin over the filling to create a pouch and seal the edges with a little water.
  8. In a deep pan or fryer, heat vegetable oil to 180°C (350°F). Fry the stuffed tofu puffs in batches for 3-4 minutes until golden brown, turning occasionally.
  9. Remove the puffs and drain on paper towels. Serve hot with soy sauce or sweet chili sauce for dipping.
