Ingredients

  • Lotus leaves - 2 large leaves
  • Jasmine rice - 1 cup (200g)
  • Chicken breast, diced - 150g
  • Shiitake mushrooms, diced - 50g
  • Carrot, finely chopped - 1 small (50g)
  • Green onion, chopped - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 1.5 cups (350ml)

Steps

  1. Soak the lotus leaves in warm water for 30 minutes until softened, then drain and set aside.
  2. Rinse the jasmine rice under cold water until the water runs clear, then soak in water for 30 minutes.
  3. In a medium saucepan, combine the soaked rice and 1.5 cups of water, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  4. In a skillet, heat sesame oil over medium heat, add garlic and ginger, and sauté for 1 minute until fragrant.
  5. Add diced chicken, shiitake mushrooms, and carrot to the skillet, cooking for about 5-7 minutes until the chicken is cooked through.
  6. Stir in green onions, coconut aminos, salt, and black pepper, mixing well, then remove from heat.
  7. Once the rice is cooked, fold it into the chicken mixture until well combined.
  8. Lay one lotus leaf on a flat surface, spoon half of the rice mixture into the center, then fold the leaves over to create a parcel, securing it with kitchen twine if necessary.
  9. Repeat with the second lotus leaf and the remaining rice mixture.
  10. Preheat the oven to 180°C (350°F).
  11. Place the wrapped lotus leaf parcels on a baking tray and bake for 30-35 minutes.
  12. Remove from the oven, let cool for a few minutes, then unwrap and serve warm.
