Ingredients
- Lotus leaves - 2 large leaves
- Jasmine rice - 1 cup (200g)
- Chicken breast, diced - 150g
- Shiitake mushrooms, diced - 50g
- Carrot, finely chopped - 1 small (50g)
- Green onion, chopped - 2 tablespoons
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 1.5 cups (350ml)
Steps
- Soak the lotus leaves in warm water for 30 minutes until softened, then drain and set aside.
- Rinse the jasmine rice under cold water until the water runs clear, then soak in water for 30 minutes.
- In a medium saucepan, combine the soaked rice and 1.5 cups of water, bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
- In a skillet, heat sesame oil over medium heat, add garlic and ginger, and sauté for 1 minute until fragrant.
- Add diced chicken, shiitake mushrooms, and carrot to the skillet, cooking for about 5-7 minutes until the chicken is cooked through.
- Stir in green onions, coconut aminos, salt, and black pepper, mixing well, then remove from heat.
- Once the rice is cooked, fold it into the chicken mixture until well combined.
- Lay one lotus leaf on a flat surface, spoon half of the rice mixture into the center, then fold the leaves over to create a parcel, securing it with kitchen twine if necessary.
- Repeat with the second lotus leaf and the remaining rice mixture.
- Preheat the oven to 180°C (350°F).
- Place the wrapped lotus leaf parcels on a baking tray and bake for 30-35 minutes.
- Remove from the oven, let cool for a few minutes, then unwrap and serve warm.
