Ingredients

  • Zucchini - 2 medium (about 400g)
  • Carrot - 1 medium (about 100g)
  • Bell pepper - 1/2 medium (about 75g)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons (low sodium preferred)
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onion - 2 stalks, chopped
  • Tofu or chicken breast - 150g (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create noodles. Set aside.
  2. Julienne the carrot and bell pepper into thin strips and set aside.
  3. If using tofu or chicken, cut it into small cubes. Heat olive oil in a large skillet over medium heat, add the protein, and cook until browned and cooked through (about 5-7 minutes for chicken, 3-4 minutes for tofu). Remove from skillet and set aside.
  4. In the same skillet, add sesame oil and sauté the minced garlic and ginger for about 30 seconds until fragrant.
  5. Add the carrot and bell pepper to the skillet and stir-fry for 2-3 minutes until slightly tender.
  6. Add the spiralized zucchini noodles to the skillet along with the cooked protein (if using), soy sauce, and season with salt and black pepper. Stir-fry for another 2-3 minutes until the zucchini is just tender but still slightly crisp.
  7. Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
