Ingredients
- Zucchini - 2 medium (about 400g)
- Carrot - 1 medium (about 100g)
- Bell pepper - 1/2 medium (about 75g)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons (low sodium preferred)
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Green onion - 2 stalks, chopped
- Tofu or chicken breast - 150g (optional)
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 teaspoon (for garnish)
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create noodles. Set aside.
- Julienne the carrot and bell pepper into thin strips and set aside.
- If using tofu or chicken, cut it into small cubes. Heat olive oil in a large skillet over medium heat, add the protein, and cook until browned and cooked through (about 5-7 minutes for chicken, 3-4 minutes for tofu). Remove from skillet and set aside.
- In the same skillet, add sesame oil and sauté the minced garlic and ginger for about 30 seconds until fragrant.
- Add the carrot and bell pepper to the skillet and stir-fry for 2-3 minutes until slightly tender.
- Add the spiralized zucchini noodles to the skillet along with the cooked protein (if using), soy sauce, and season with salt and black pepper. Stir-fry for another 2-3 minutes until the zucchini is just tender but still slightly crisp.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
