Ingredients

  • Zucchini - 2 medium-sized (approximately 400g)
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons (low sodium)
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Green onions - 2, chopped
  • Red chili flakes - 1/2 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the zucchini and cut them into thin half-moons, about 0.5 cm thick.
  2. Heat the olive oil in a large non-stick skillet or wok over medium-high heat.
  3. Add the minced garlic and ginger to the pan and stir-fry for about 30 seconds until fragrant.
  4. Add the sliced zucchini to the pan and stir-fry for 4-5 minutes until tender but still crisp.
  5. Pour in the soy sauce and sesame oil, stirring well to coat the zucchini evenly.
