Ingredients

  • Rice noodles - 150g
  • Firm tofu - 200g
  • Bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Broccoli florets - 100g
  • Green onions (chopped) - 2
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Soy sauce (gluten-free) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Soak the rice noodles in hot water for 10-15 minutes until soft, then drain and set aside.
  2. Press the tofu to remove excess moisture, then cut it into cubes.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and sauté until golden brown on all sides, about 5-7 minutes. Remove the tofu and set aside.
  4. In the same skillet, add the remaining vegetable oil. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  5. Add the sliced bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for 3-4 minutes until the vegetables are just tender.
  6. Return the tofu to the skillet and add the soaked noodles, gluten-free soy sauce, sesame oil, and red chili flakes. Toss everything together and cook for an additional 2-3 minutes until heated through.
  7. Season with salt and pepper to taste, and garnish with chopped green onions before serving.
