- Gluten-free rice noodles - 150g
- Pork tenderloin - 200g, thinly sliced
- Red bell pepper - 1, julienned
- Carrot - 1 medium, julienned
- Green onions - 3, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, minced
- Soy sauce (gluten-free) - 3 tablespoons
- Oyster sauce (gluten-free) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Soak the gluten-free rice noodles in hot water for about 15 minutes or until softened. Drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry for about 4-5 minutes until browned and cooked through. Remove from the pan and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
- Add the julienned red bell pepper and carrot to the skillet, and stir-fry for 3-4 minutes until they start to soften.
- Return the cooked pork to the skillet, and add the soaked rice noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together and stir-fry for another 2-3 minutes until heated through and well combined.
- Season with salt and black pepper to taste. Finally, add chopped green onions, toss again, and serve immediately.
