Ingredients

  • Gluten-free rice noodles - 150g
  • Pork tenderloin - 200g, thinly sliced
  • Red bell pepper - 1, julienned
  • Carrot - 1 medium, julienned
  • Green onions - 3, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Soy sauce (gluten-free) - 3 tablespoons
  • Oyster sauce (gluten-free) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the gluten-free rice noodles in hot water for about 15 minutes or until softened. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork and stir-fry for about 4-5 minutes until browned and cooked through. Remove from the pan and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  4. Add the julienned red bell pepper and carrot to the skillet, and stir-fry for 3-4 minutes until they start to soften.
  5. Return the cooked pork to the skillet, and add the soaked rice noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together and stir-fry for another 2-3 minutes until heated through and well combined.
  6. Season with salt and black pepper to taste. Finally, add chopped green onions, toss again, and serve immediately.
