Ingredients

  • Lotus root - 200 grams
  • Firm tofu - 150 grams
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel and slice the lotus root into thin rounds, about 0.5 cm thick.
  2. Rinse the lotus root slices under cold water and soak them in a bowl of water to prevent them from browning.
  3. Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes.
  4. In a bowl, toss the tofu cubes with cornstarch and a pinch of salt to coat evenly.
  5. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium-high heat. Add the tofu cubes and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set aside.
  6. In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
  7. Drain the lotus root and add it to the pan, stir-frying for 5 minutes until slightly tender but still crisp.
  8. Add the sliced bell pepper and continue to stir-fry for another 3-4 minutes.
  9. Return the fried tofu to the pan, then pour in the soy sauce and sesame oil. Stir well to coat all ingredients evenly.
  10. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Season with salt and black pepper to taste.
  11. Remove from heat, garnish with chopped green onions, and serve hot.
