Ingredients
- Lotus root - 200 grams
- Firm tofu - 150 grams
- Bell pepper (red or yellow) - 1 medium, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 inch, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Peel and slice the lotus root into thin rounds, about 0.5 cm thick.
- Rinse the lotus root slices under cold water and soak them in a bowl of water to prevent them from browning.
- Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, toss the tofu cubes with cornstarch and a pinch of salt to coat evenly.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium-high heat. Add the tofu cubes and fry until golden brown on all sides, about 5-7 minutes. Remove the tofu from the pan and set aside.
- In the same pan, add the remaining tablespoon of vegetable oil. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Drain the lotus root and add it to the pan, stir-frying for 5 minutes until slightly tender but still crisp.
- Add the sliced bell pepper and continue to stir-fry for another 3-4 minutes.
- Return the fried tofu to the pan, then pour in the soy sauce and sesame oil. Stir well to coat all ingredients evenly.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together. Season with salt and black pepper to taste.
- Remove from heat, garnish with chopped green onions, and serve hot.
