  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Chili flakes - 1 teaspoon (optional)
  • Green onion - 2 stalks, chopped for garnish
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Peel and thinly slice the lotus root into rounds, then soak in water to prevent browning.
  2. Heat vegetable oil in a wok or large pan over medium-high heat.
  3. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Drain the lotus root and add it to the pan, stir-frying for about 3-4 minutes until slightly tender.
  5. Add the sliced bell pepper, julienned carrot, and snow peas to the pan, stir-frying for another 3-4 minutes until the vegetables are bright and tender-crisp.
  6. Pour in the soy sauce and sesame oil, tossing everything together to coat evenly.
  7. If desired, sprinkle in chili flakes for a bit of heat and stir well.
  8. Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
