Ingredients

  • Chicken breast - 300 grams, sliced thinly
  • Zucchini - 200 grams, sliced into half-moons
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Green onions - 2 stalks, sliced
  • Red chili flakes - 1/4 teaspoon (optional)
  • Salt - to taste

Steps

  1. In a bowl, combine the sliced chicken with cornstarch, black pepper, and a pinch of salt. Let it marinate for about 10 minutes.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry until it turns golden brown and is cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add sesame oil, minced garlic, and grated ginger. Stir-fry for about 30 seconds until fragrant.
  4. Add the sliced zucchini to the skillet and stir-fry for 3-4 minutes until tender but still crisp.
  5. Return the cooked chicken to the skillet, add soy sauce, and toss everything together for another 2 minutes. Adjust seasoning with salt and add red chili flakes if desired.
  6. Garnish with sliced green onions before serving.
