  • Bell pepper (green) - 1 medium, sliced
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Gluten-free soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Black pepper - to taste
  • Spring onions - 2, chopped for garnish

Steps

  1. In a mixing bowl, combine the sliced chicken with cornstarch, black pepper, and 1 tablespoon of gluten-free soy sauce. Toss well to coat and let marinate for 5 minutes.
  2. Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-6 minutes until cooked through and browned. Remove the chicken from the pan and set aside.
