- Chicken breast - 300 grams, thinly sliced
- Cashews - 80 grams, roasted and unsalted
- Bell pepper - 1 medium, sliced
- Broccoli - 100 grams, cut into florets
- Carrot - 1 medium, julienned
- Green onion - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1-inch piece, minced
- Soy sauce - 3 tablespoons
- Oyster sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Water - 50 milliliters
Steps
- In a bowl, mix the sliced chicken with cornstarch and a tablespoon of soy sauce. Let it marinate for 10 minutes.
- Heat a tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pan, add another tablespoon of vegetable oil. Stir in the minced garlic and ginger, cooking for about 30 seconds until fragrant.
- Add the sliced bell pepper, broccoli florets, and julienned carrot to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the pan. Add the remaining soy sauce, oyster sauce, sesame oil, and water. Toss everything together and cook for an additional 2-3 minutes.
- Finally, stir in the roasted cashews and chopped green onion. Serve hot, preferably over steamed rice.
