Ingredients

  • Sticky rice - 200 grams
  • Chicken thighs, boneless - 300 grams
  • Soy sauce (Halal) - 3 tablespoons
  • Oyster sauce (Halal) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Spring onions, chopped - 2
  • Chicken broth - 300 ml
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Coriander leaves, for garnish - a handful

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a bowl, combine the chicken thighs with soy sauce, oyster sauce, sesame oil, minced garlic, minced ginger, salt, pepper, and sugar. Marinate for at least 15 minutes to allow the flavors to infuse.
  3. In a pot, heat a little oil over medium heat and add the marinated chicken. Cook until browned on all sides for about 5-7 minutes.
  4. Add the chicken broth to the pot and bring it to a simmer. Reduce the heat and cover, cooking for about 15 minutes or until chicken is cooked through.
  5. While the chicken is cooking, drain the soaked sticky rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam the rice over boiling water for about 20-25 minutes until tender and sticky.
  6. Once the chicken is done, remove it from the pot and let it rest for a few minutes. Slice the chicken into bite-sized pieces.
  7. Serve the sticky rice on plates, topped with the sliced chicken, and drizzle some of the cooking sauce over it. Garnish with chopped spring onions and coriander leaves.
