Ingredients

  • Glutinous rice - 200 grams
  • Water - 250 ml
  • Shiitake mushrooms - 50 grams, dried
  • Carrot - 1 medium, diced
  • Green peas - 50 grams
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Ginger - 1 teaspoon, minced
  • Garlic - 1 clove, minced
  • Spring onions - 2, chopped
  • Salt - to taste

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Soak the dried shiitake mushrooms in warm water for about 30 minutes until rehydrated, then slice them thinly.
  3. In a pan, heat sesame oil over medium heat, add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
  4. Add diced carrot, peas, and shiitake mushrooms to the pan, and stir-fry for about 5 minutes until the vegetables are tender.
  5. Stir in soy sauce and cook for another minute, then remove from heat and set aside.
  6. Drain the soaked rice and mix it with the sautéed vegetables and a pinch of salt.
  7. Line a steamer basket with parchment paper and spread the rice mixture evenly in it.
  8. Fill a pot with water, bring it to a boil, then place the steamer basket on top, making sure the water does not touch the rice.
  9. Cover and steam for about 30-35 minutes, or until the rice is tender and sticky.
  10. Once done, let it rest for a few minutes before fluffing with a fork and garnishing with chopped spring onions.
