Ingredients

  • Rice flour - 100 grams

  • Sugar - 50 grams
  • Coconut milk - 50 ml
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Pandan extract (optional) - 1 teaspoon
  • Grated coconut (for topping) - 30 grams

Steps

  1. In a mixing bowl, combine rice flour, sugar, baking powder, and salt.
  2. Gradually add water and coconut milk to the dry ingredients, stirring until smooth.
  3. If desired, add pandan extract for flavor and mix well.
  4. Grease a small heat-proof dish or cake pan and pour the batter into it.
  5. Prepare a steamer by boiling water in a pot, then place the dish in the steamer basket.
  6. Cover and steam the rice cake for about 25-30 minutes on medium heat, or until a toothpick inserted comes out clean.
  7. Once done, carefully remove the dish from the steamer and let it cool for a few minutes.
