Steps
- In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- While the dough is rising, prepare the filling by mixing pumpkin puree, sesame oil, chopped green onions, soy sauce, and ground white pepper in a bowl.
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and flatten it into a disc.
- Place a spoonful of the pumpkin filling in the center of each disc and carefully fold the edges over to seal, shaping it into a bun.
- Arrange the buns on parchment paper in a bamboo steamer, leaving space between them. Cover and let them rise for an additional 10 minutes.
- Bring water to a boil in a pot, then place the bamboo steamer over it. Steam the buns for about 15-20 minutes until cooked through.
- Remove the buns from the steamer and serve warm, optionally with extra soy sauce for dipping.
