Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Warm water - 100 ml
  • Pumpkin puree - 100 grams
  • Salt - 2 grams
  • Sesame oil - 5 ml
  • Green onions - 2 tablespoons, finely chopped
  • Soy sauce - 10 ml
  • Ground white pepper - a pinch

Steps

  1. In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and pour in the yeast mixture.
  3. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. While the dough is rising, prepare the filling by mixing pumpkin puree, sesame oil, chopped green onions, soy sauce, and ground white pepper in a bowl.
  6. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and flatten it into a disc.
  7. Place a spoonful of the pumpkin filling in the center of each disc and carefully fold the edges over to seal, shaping it into a bun.
  8. Arrange the buns on parchment paper in a bamboo steamer, leaving space between them. Cover and let them rise for an additional 10 minutes.
  9. Bring water to a boil in a pot, then place the bamboo steamer over it. Steam the buns for about 15-20 minutes until cooked through.
  10. Remove the buns from the steamer and serve warm, optionally with extra soy sauce for dipping.
