Ingredients

  • Jasmine rice - 150g
  • Water - 300ml
  • White fish fillets (such as cod or tilapia) - 200g
  • Fresh ginger - 10g, thinly sliced
  • Scallions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, combine the rinsed rice and 300ml of water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the fish. Season the fish fillets with salt and black pepper on both sides.
  4. Place the fish fillets in a heatproof dish that fits inside your steamer. Top with sliced ginger and half of the chopped scallions.
  5. Set up a steamer over a pot of boiling water. Place the dish with the fish in the steamer, cover, and steam for 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Once the rice and fish are done, drizzle the soy sauce and sesame oil over the fish. Garnish with the remaining scallions.
  7. Fluff the rice with a fork and serve it on plates topped with the steamed fish.
