Steps

  1. In a mixing bowl, whisk the eggs until well beaten and smooth.
  2. Add water, salt, and white pepper to the eggs, and mix well to combine.
  3. Strain the egg mixture through a fine sieve into another bowl to ensure a silky texture.
  4. Prepare a steamer or a pot with a steaming rack, and bring water to a boil.
  5. Pour the strained egg mixture into a heatproof dish or bowl that fits in the steamer.
  6. Cover the dish with aluminum foil to prevent water droplets from falling into the custard.
  7. Place the dish in the steamer, cover with a lid, and steam for about 15-18 minutes on medium heat.
  8. Check for doneness by inserting a toothpick; it should come out clean when the custard is set.
