  • Vegetable oil - 1 tablespoon
  • Water - 100 ml

Steps

  1. In a mixing bowl, combine the cornmeal, sugar, baking powder, and salt.
  2. In another bowl, mix the coconut milk, vegetable oil, and water until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Fold in the fresh corn kernels gently into the batter.
  5. Prepare a steamer by bringing water to a boil in the lower pot.
  6. Lightly grease two small heat-proof bowls or ramekins with oil.
  7. Pour the batter evenly into the bowls, filling them about 3/4 full.
  8. Place the bowls in the steamer and cover with a lid.
  9. Steam for about 20 minutes or until a toothpick inserted into the center comes out clean.
