Ingredients

  • Fresh clams - 500 grams
  • Rice wine (Shaoxing wine) - 60 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onions - 2, finely chopped
  • Chili pepper - 1, sliced (optional)
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Water - 200 ml
  • Fresh coriander - a handful, for garnish

Steps

  1. Rinse the clams under cold water to remove any sand or grit. Soak them in salted water for about 20 minutes to help them purge any remaining sand.
  2. In a large steaming pot or wok, bring 200 ml of water to a boil.
  3. While the water is heating, prepare the flavoring mixture by combining rice wine, minced garlic, minced ginger, soy sauce, and sesame oil in a bowl.
  4. Once the water is boiling, place the clams in a steamer basket and pour the flavoring mixture over them. Add the sliced chili pepper if using.
  5. Cover and steam the clams for about 5-7 minutes or until they have opened up. Discard any clams that do not open.
  6. Remove the steamer basket from the pot and transfer the clams to a serving dish.
  7. Garnish with chopped spring onions and fresh coriander before serving.
