- Fresh clams - 500 grams
- Fresh ginger - 30 grams, julienned
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Shaoxing wine - 1 tablespoon
- Spring onions - 2, chopped
- Cilantro - a handful, chopped
- Sesame oil - 1 teaspoon
- Red chili - 1, sliced (optional)
- Water - 100 ml
Steps
- Start by cleaning the clams under running water to remove any sand or grit. Discard any clams that are open and do not close when tapped.
- In a steaming dish, combine the julienned ginger, minced garlic, chopped spring onions, and sliced red chili.
- Place the cleaned clams on top of the ginger mixture in the steaming dish.
- In a small bowl, mix together the soy sauce, Shaoxing wine, and sesame oil. Drizzle this mixture over the clams.
- Pour the water into the bottom of the steamer pot, making sure it does not touch the steaming dish.
- Cover the steamer pot and bring the water to a boil. Steam the clams for about 8-10 minutes, or until they open up.
- Once cooked, remove the clams from the steamer and sprinkle chopped cilantro over the top. Serve immediately with some of the steaming liquid.
