These soft and fluffy vegan steamed buns are filled with a savory mixture of mushrooms and vegetables, making for a delightful Chinese breakfast. Perfectly steamed, they are both satisfying and nutritious.

Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Warm water - 150 ml
  • Salt - 2 grams
  • Vegetable oil - 15 ml
  • Mushrooms (finely chopped) - 100 grams
  • Carrot (grated) - 50 grams
  • Green onions (chopped) - 30 grams
  • Soy sauce - 15 ml
  • Sesame oil - 5 ml
  • Black pepper - 1 gram

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and vegetable oil.
  3. Mix the ingredients until they form a dough, then knead for about 10 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the filling. In a pan, heat a little oil and sauté the chopped mushrooms, grated carrot, and green onions for about 5 minutes.
  5. Add soy sauce, sesame oil, and black pepper to the pan, stirring to combine. Cook for another 2 minutes, then remove from heat and let it cool.
  6. Once the dough has doubled in size, punch it down and divide it into 6 equal pieces. Roll each piece into a circle about 10 cm in diameter.
  7. Place a spoonful of the filling in the center of each circle, then gather the edges and pinch them together to seal the bun.
  8. Place the buns on parchment paper squares and let them rest for another 15 minutes.
  9. Steam the buns in a steamer basket over boiling water for 15 minutes. Serve warm.
