Steamed Buns
These soft and fluffy vegan steamed buns are filled with a savory mixture of mushrooms and vegetables, making for a delightful Chinese breakfast. Perfectly steamed, they are both satisfying and nutritious.

Ingredients
- All-purpose flour - 250 grams
- Active dry yeast - 5 grams
- Sugar - 10 grams
- Warm water - 150 ml
- Salt - 2 grams
- Vegetable oil - 15 ml
- Mushrooms (finely chopped) - 100 grams
- Carrot (grated) - 50 grams
- Green onions (chopped) - 30 grams
- Soy sauce - 15 ml
- Sesame oil - 5 ml
- Black pepper - 1 gram
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for 10 minutes until frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and vegetable oil.
- Mix the ingredients until they form a dough, then knead for about 10 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the filling. In a pan, heat a little oil and sauté the chopped mushrooms, grated carrot, and green onions for about 5 minutes.
- Add soy sauce, sesame oil, and black pepper to the pan, stirring to combine. Cook for another 2 minutes, then remove from heat and let it cool.
- Once the dough has doubled in size, punch it down and divide it into 6 equal pieces. Roll each piece into a circle about 10 cm in diameter.
- Place a spoonful of the filling in the center of each circle, then gather the edges and pinch them together to seal the bun.
- Place the buns on parchment paper squares and let them rest for another 15 minutes.
- Steam the buns in a steamer basket over boiling water for 15 minutes. Serve warm.
