Ingredients

  • Fresh spinach - 200 grams
  • Firm tofu - 150 grams
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Start by pressing the firm tofu to remove excess moisture, then cut it into small cubes.
  2. In a pot, heat sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the vegetable broth to the pot and bring it to a simmer.
  4. Once the broth is simmering, gently add the tofu cubes and let them cook for about 5 minutes.
  5. Add the fresh spinach to the pot and cook for an additional 2-3 minutes, until wilted.
  6. Stir in the soy sauce, and season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped green onions before serving.
