  • Szechuan peppercorns - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Cilantro - for garnish

Steps

  1. Clean the king oyster mushrooms and slice them into thin, clam-like pieces.
  2. In a medium bowl, mix together soy sauce, vegetable broth, minced garlic, grated ginger, red chili flakes, and Szechuan peppercorns to create the marinade.
  3. Add the sliced mushrooms to the marinade and let them soak for 15 minutes to absorb the flavors.
  4. In a small bowl, combine cornstarch with 2 tablespoons of water to create a slurry.
  5. Heat sesame oil in a pan over medium heat and add the marinated mushrooms along with the marinade.
  6. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are tender.
  7. Stir in the cornstarch slurry and cook for an additional 2-3 minutes until the sauce thickens.
  8. Remove from heat and garnish with chopped green onions and cilantro before serving.
