  • Firm tofu - 300 grams
  • Vegetable broth - 500 ml
  • Red chili paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2 stalks, chopped
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams
  • Sesame oil - 1 tablespoon
  • Cilantro - a handful, chopped
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Press the firm tofu to remove excess water, then cut it into bite-sized cubes.
  2. In a pot, heat sesame oil over medium heat and sauté garlic and ginger until fragrant.
  3. Add the red chili paste and soy sauce, stirring to combine, then pour in the vegetable broth.
  4. Bring the broth to a simmer, then add the cubed tofu, sliced mushrooms, and cook for about 10 minutes.
  5. Stir in the spinach and cook for an additional 2-3 minutes until wilted.
  6. Season with salt to taste, then remove from heat.
  7. Serve hot, garnished with chopped green onions and cilantro, with a squeeze of lime juice on top.
