  • Spring onions - 2, sliced
  • Carrot - 1 small, julienned
  • Red bell pepper - 1 small, diced
  • Cilantro - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over medium heat and add the minced garlic and ginger, sautéing until fragrant.
  2. Add the soy sauce, sesame oil, chili oil, salt, and black pepper to the broth, stirring well.
  3. Gently slide the silken tofu into the broth and allow it to warm through for about 5 minutes, being careful not to break it apart.
  4. Add the julienned carrot and diced red bell pepper, cooking for an additional 3-4 minutes until the vegetables are tender but still crisp.
  5. Remove the saucepan from heat and carefully transfer the tofu and broth into serving bowls.
