- Firm tofu - 200 grams
- Zucchini - 2 medium (about 300 grams)
- Red bell pepper - 1 medium (about 150 grams)
- Green onions - 2 stalks
- Garlic - 2 cloves
- Ginger - 1 teaspoon, minced
- Soy sauce - 3 tablespoons
- Chili paste - 1 tablespoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Press the firm tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- While the tofu is being pressed, spiralize the zucchini to create zoodles and set aside.
- Heat olive oil in a non-stick pan over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
- In the same pan, add minced garlic and ginger, sauté for 1 minute until fragrant.
- Add sliced red bell pepper and cook for another 3-4 minutes until slightly tender.
- Stir in the soy sauce, chili paste, and sesame oil, mixing well to combine the flavors.
- Add the zoodles to the pan and toss to coat them in the sauce. Cook for 2-3 minutes until the zoodles are just tender.
- Return the cooked tofu to the pan, mixing everything together. Season with salt and black pepper to taste.
- Serve hot, garnished with sliced green onions and sesame seeds.
