Ingredients

  • Firm tofu - 200 grams
  • Zucchini - 2 medium (about 300 grams)
  • Red bell pepper - 1 medium (about 150 grams)
  • Green onions - 2 stalks
  • Garlic - 2 cloves
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 3 tablespoons
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Press the firm tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. While the tofu is being pressed, spiralize the zucchini to create zoodles and set aside.
  3. Heat olive oil in a non-stick pan over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same pan, add minced garlic and ginger, sauté for 1 minute until fragrant.
  5. Add sliced red bell pepper and cook for another 3-4 minutes until slightly tender.
  6. Stir in the soy sauce, chili paste, and sesame oil, mixing well to combine the flavors.
  7. Add the zoodles to the pan and toss to coat them in the sauce. Cook for 2-3 minutes until the zoodles are just tender.
  8. Return the cooked tofu to the pan, mixing everything together. Season with salt and black pepper to taste.
  9. Serve hot, garnished with sliced green onions and sesame seeds.
