- Firm tofu - 200 grams
- Chinese eggplant - 1 medium (about 250 grams)
- Red bell pepper - 1 medium (about 150 grams)
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Chili paste - 1 tablespoon (adjust to taste)
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Sesame oil - 1 teaspoon
- Green onions - 2 stalks, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
- In a bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
- Slice the Chinese eggplant into 1-inch pieces and add to the skillet. Cook for about 5 minutes until it starts to soften.
- Add the chopped red bell pepper and continue to stir-fry for another 3 minutes.
- Return the tofu to the skillet and add the soy sauce and chili paste. Stir well to combine and cook for another 2-3 minutes until everything is heated through.
- Drizzle with sesame oil and sprinkle with chopped green onions before serving.
