Ingredients

  • Firm tofu - 200 grams
  • Chinese eggplant - 1 medium (about 250 grams)
  • Red bell pepper - 1 medium (about 150 grams)
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Chili paste - 1 tablespoon (adjust to taste)
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
  2. In a bowl, toss the tofu cubes with cornstarch, salt, and pepper until evenly coated.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  5. Slice the Chinese eggplant into 1-inch pieces and add to the skillet. Cook for about 5 minutes until it starts to soften.
  6. Add the chopped red bell pepper and continue to stir-fry for another 3 minutes.
  7. Return the tofu to the skillet and add the soy sauce and chili paste. Stir well to combine and cook for another 2-3 minutes until everything is heated through.
  8. Drizzle with sesame oil and sprinkle with chopped green onions before serving.
