  • Rice vinegar - 1 tablespoon
  • Green onions, chopped - 2 stalks
  • Bell pepper, julienned - 1/2 medium
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste

Steps

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
  3. Introduce Szechuan peppercorns and red chili flakes, stirring for another 30 seconds to release their flavors.
  4. Add the julienned bell pepper and sauté for 3-4 minutes until slightly softened.
  5. Stir in the zucchini noodles and cook for 3-5 minutes until they are tender but still firm.
  6. Pour in the soy sauce and rice vinegar, mixing well to coat the noodles evenly. Cook for an additional 2 minutes.
  7. Remove from heat and sprinkle chopped green onions and cilantro on top. Adjust salt to taste.
  8. Serve warm, garnished with extra cilantro if desired.
