- Dried red chili peppers - 4 pieces

- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Scallions - 2, chopped
- Soy sauce - 2 tablespoons
- Chili oil - 1 tablespoon
- Vegetable broth - 500 ml
- Mushrooms (shiitake or button) - 100 grams, sliced
- Tofu (firm) - 100 grams, cubed
- Sichuan Doubanjiang (spicy bean paste) - 1 tablespoon
- Noodles (wheat or rice) - 150 grams
- Spinach - 100 grams
- Salt - to taste
- Lime - 1, for garnish
Steps
- In a dry skillet, toast the Sichuan peppercorns and dried red chili peppers over medium heat until fragrant, about 1-2 minutes. Remove from heat and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and half of the chopped scallions. Sauté for about 2 minutes until fragrant.
- Add the toasted Sichuan peppercorns and dried red chili peppers to the pot, stirring for another minute.
- Stir in the soy sauce, chili oil, and Sichuan Doubanjiang, cooking for an additional minute to combine the flavors.
- Pour in the vegetable broth and bring to a simmer. Add the sliced mushrooms and cubed tofu, cooking for about 5 minutes until the mushrooms are tender.
- Meanwhile, cook the noodles according to package instructions. Drain and set aside.
- Add the spinach to the broth and cook for another 2-3 minutes until wilted. Adjust seasoning with salt as needed.
- To serve, place a portion of noodles in each bowl and ladle the hot broth, mushrooms, tofu, and spinach over the noodles. Garnish with the remaining scallions and a wedge of lime.
