Ingredients

  • Sichuan peppercorns - 1 teaspoon
  • Dried red chili peppers - 4 pieces
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Scallions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Chili oil - 1 tablespoon
  • Vegetable broth - 500 ml
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Tofu (firm) - 100 grams, cubed
  • Sichuan Doubanjiang (spicy bean paste) - 1 tablespoon
  • Noodles (wheat or rice) - 150 grams
  • Spinach - 100 grams
  • Salt - to taste
  • Lime - 1, for garnish

Steps

  1. In a dry skillet, toast the Sichuan peppercorns and dried red chili peppers over medium heat until fragrant, about 1-2 minutes. Remove from heat and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and half of the chopped scallions. Sauté for about 2 minutes until fragrant.
  3. Add the toasted Sichuan peppercorns and dried red chili peppers to the pot, stirring for another minute.
  4. Stir in the soy sauce, chili oil, and Sichuan Doubanjiang, cooking for an additional minute to combine the flavors.
  5. Pour in the vegetable broth and bring to a simmer. Add the sliced mushrooms and cubed tofu, cooking for about 5 minutes until the mushrooms are tender.
  6. Meanwhile, cook the noodles according to package instructions. Drain and set aside.
  7. Add the spinach to the broth and cook for another 2-3 minutes until wilted. Adjust seasoning with salt as needed.
  8. To serve, place a portion of noodles in each bowl and ladle the hot broth, mushrooms, tofu, and spinach over the noodles. Garnish with the remaining scallions and a wedge of lime.
