- Shrimp (peeled and deveined) - 200 grams
- Cooked jasmine rice - 2 cups
- Eggs - 2 large
- Green onion (sliced) - 2 stalks
- Garlic (minced) - 2 cloves
- Red bell pepper (diced) - 1/2 medium
- Carrot (diced) - 1 medium
- Frozen peas - 1/2 cup
- Soy sauce (low sodium) - 3 tablespoons
- Sriracha sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining vegetable oil, diced red bell pepper, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix with the vegetables.
- Add the cooked jasmine rice, frozen peas, soy sauce, sriracha sauce, and cooked shrimp back into the skillet. Stir well to combine all ingredients and heat through.
- Drizzle with sesame oil, season with salt and black pepper to taste, and toss in the sliced green onions before serving.
