Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Cooked jasmine rice - 2 cups
  • Eggs - 2 large
  • Green onion (sliced) - 2 stalks
  • Garlic (minced) - 2 cloves
  • Red bell pepper (diced) - 1/2 medium
  • Carrot (diced) - 1 medium
  • Frozen peas - 1/2 cup
  • Soy sauce (low sodium) - 3 tablespoons
  • Sriracha sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the remaining vegetable oil, diced red bell pepper, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender.
  5. Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix with the vegetables.
  6. Add the cooked jasmine rice, frozen peas, soy sauce, sriracha sauce, and cooked shrimp back into the skillet. Stir well to combine all ingredients and heat through.
  7. Drizzle with sesame oil, season with salt and black pepper to taste, and toss in the sliced green onions before serving.
