- Tapioca starch - 100 grams
- Rice flour - 50 grams
- Chili powder - 1 tablespoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 100 ml
- Vegetable oil (for frying) - as needed
Steps
- In a food processor, combine the shrimp, tapioca starch, rice flour, chili powder, garlic powder, salt, and black pepper. Blend until smooth.
- Gradually add water while blending until a thick paste forms.
- Transfer the mixture to a piping bag or a plastic bag with the corner snipped off.
- Heat vegetable oil in a deep pan to 180°C (350°F).
- Pipe small circles of the shrimp mixture into the hot oil, frying in batches to avoid overcrowding.
- Fry until the chips puff up and turn golden brown, about 2-3 minutes.
- Remove the chips with a slotted spoon and drain on paper towels.
