- Carrot (julienned) - 1 medium
- Green onions (sliced) - 2 stalks
- Garlic (minced) - 3 cloves
- Ginger (minced) - 1 tablespoon
- Soy sauce (low sodium) - 2 tablespoons
- Chili paste - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Lime (juiced) - 1 medium
- Cilantro (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and ginger, sautéing until fragrant (about 30 seconds).
- Add the shrimp to the skillet and cook for 3-4 minutes, or until they turn pink and opaque. Remove shrimp from the skillet and set aside.
- In the same skillet, add bell pepper and carrot, stir-frying for 2-3 minutes until slightly tender.
- Return the shrimp to the skillet and add the cooked noodles, soy sauce, chili paste, sesame oil, lime juice, salt, and black pepper. Toss everything together until well combined and heated through (about 2-3 minutes).
- Remove from heat and garnish with green onions and chopped cilantro before serving.
