- Oyster sauce - 1 tablespoon
- Chili paste - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 teaspoon
- Water - 100 ml

Steps
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the shrimp to the pan and cook for 2-3 minutes until they turn pink. Remove shrimp and set aside.
- In the same pan, add another tablespoon of vegetable oil. Add the eggplant and cook for about 5 minutes until softened.
- Add the sliced green bell pepper and red chili pepper to the pan, sautéing for an additional 3 minutes.
- In a small bowl, mix soy sauce, oyster sauce, chili paste, cornstarch, and water to create the sauce.
- Return the cooked shrimp to the pan, pour the sauce over the shrimp and vegetables, and stir well to combine.
- Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
- Serve hot, garnished with chopped spring onions and sesame seeds.
