Ingredients

  • Green bell pepper (sliced) - 1/2
  • Red chili pepper (sliced) - 1, adjust to taste
  • Soy sauce (low sodium) - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Chili paste - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 teaspoon
  • Water - 100 ml
  • Spring onions (chopped) - for garnish
  • Sesame seeds - for garnish

Steps

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the shrimp to the pan and cook for 2-3 minutes until they turn pink. Remove shrimp and set aside.
  4. In the same pan, add another tablespoon of vegetable oil. Add the eggplant and cook for about 5 minutes until softened.
  5. Add the sliced green bell pepper and red chili pepper to the pan, sautéing for an additional 3 minutes.
  6. In a small bowl, mix soy sauce, oyster sauce, chili paste, cornstarch, and water to create the sauce.
  7. Return the cooked shrimp to the pan, pour the sauce over the shrimp and vegetables, and stir well to combine.
  8. Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
  9. Serve hot, garnished with chopped spring onions and sesame seeds.
