  • Rice vinegar - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Chili oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 tablespoon
  • Green onion - 1, chopped
  • Salt - to taste

Steps

  1. Soak the dried seaweed in warm water for about 10 minutes until it rehydrates and expands. Drain and squeeze out excess water.
  2. In a large mixing bowl, combine the rehydrated seaweed, sliced cucumber, julienned carrot, and sliced red bell pepper.
  3. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, chili oil, minced garlic, and a pinch of salt to create the dressing.
