Ingredients

  • Rice noodles - 200 grams
  • Shrimp - 150 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Scallops - 100 grams
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Red chili - 1, finely chopped
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Oyster sauce - 1 tablespoon
  • Chili paste - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Cilantro - a handful, for garnish
  • Lime - 1, cut into wedges

Steps

  1. Soak the rice noodles in hot water for about 15 minutes or until they are soft, then drain and set aside.
  2. In a large wok or skillet, heat the vegetable oil over medium-high heat.
  3. Add minced garlic, ginger, and chopped red chili to the oil and stir-fry for about 1 minute until fragrant.
  4. Add the shrimp, squid, and scallops to the wok and stir-fry for about 3-4 minutes until they are cooked through.
  5. Stir in the soy sauce, oyster sauce, chili paste, and sesame oil, mixing well to coat the seafood.
  6. Add the soaked rice noodles to the wok and toss everything together for another 2-3 minutes until the noodles are heated through.
  7. Add the chopped spring onions and give the noodles one last toss.
  8. Serve the spicy seafood noodles hot, garnished with fresh cilantro and lime wedges on the side.
